Best friends for 19 years, Emo and Jefferson have been either roommates or next-door neighbors in the piney woods of rural east Texas, a small tropical island in the Caribbean, the "Windy City" and San Francisco.

Together they have participated in 3 epic AIDS fundraising bike rides, they have competed against each other at the Gay Games in Sydney, Australia (mountain biking), and they've participated in the last 3 Burning Man festivals.

Emo Etheridge

Emory has opened, managed and captained some of the most important and prestigious restaurants in the country. 

He has 17 years of restaurant experience. 

Over the last 12 years, Emory has managed dozens of employees, enabling the restaurants he worked at to earn James Beard award-winning service.

At Tru in Chicago, Emory helped to develop a creative and innovate new style of service that is becoming an industry standard.

At the 4 star Fifth Floor restaurant, Emory is a certified Sommelier, maintaining the Wine Spectator Grand Award wine program.

He knows what it takes to run a successful and profitable restaurant and brings immeasurable skills and talents to the team.

Jefferson McCarley

In 1999 Jefferson took on the challenge of running a small failing business that he knew nothing about  - in a country where he didn't even speak the language.

With a loan from a friend, he purchased a small bike shop in Puerto Rico, quadrupled the sales and sold it for twice what he paid for it in just over two years.

He has a degree in Advertising from Texas A&M University and seven years of experience creating and implementing marketing plans for some of the top selling consumer brands in the country.

Currently, Jefferson is an Analyst at Gap Inc. managing the flow of inventory to nearly 1,000 stores.

Jefferson’s experience ranges from running every aspect of a small mom and pop shop to managing inventory at the largest specialty retailer in the world.
